Owner, Toby Erlam has managed in high quality restaurants for the past 10 years. He has spent the last 5 years as the Landlord and restaurant manager of The Griffin Inn, Fletching, an extremely popular gourmet pub reknowned for its delicious food and excellent service. His passion for food and wine has taken him around the world visiting vineyards and winemakers in Italy, France, South Africa, Argentina and Chile. He has drunk yak's milk in Mongolia, eaten guinea pig in Peru, deep-fried grasshoppers in China and snake in Thailand - none of which will be on the Cuckoo menu. Chef, Matthew Sandells started his culinary life at the Ashdown Park Hotel as a young boy. Working alongside his mum, he immediately fell in love with the art of cooking. He then trained with the Academy of Culinary Arts receiving instruction from great names such as Albert Roux OBE, John McManus and Richard Shepherd. Returning to the Ashdown, he spent the next few years mastering the art of producing fantastic dishes in a busy demanding kitchen. In 2005 Matt moved on to The Griffin Inn, Fletching where he met Toby. Matt embraces high quality ingredients and believes strongly in using seasonal produce for their superior taste and texture. He has his own vegetable garden and uses much of his own produce in his dishes. And in his spare time he is still in the kitchen making chutneys and pickles....
